Homemade Lauki Ki Barfi Recipe
Ingredients:
1 kg lauki ( dudhi/ bottle gourd)
2 liters full fat milk
1 cup sugar
1/4 cup ghee
1 tsp cardamom powder
few chopped pistachio and almonds for garnishing
Method:
Peel , wash and grate the lauki by removing all the seeds and any soft pulp which cannot be grated
Take a heavy based vessel and cook the lauki on slow flame stirring continuously till it leaves all the moisture and is dry.
Then add the milk and cook again on low flame stirring continuously so that it does not burn for about 90 minutes till the milk is reduced to one fourth its quantity.
In a pan add the sugar , cardamom and just enough water to dissolve the sugar. Cook till the sugar melts. Remove from flame and add it to the lauki and cook again on low flame stirring continuously till the mixture thickens and is dry.
Remove from flame and spread it in a greased tray. Keep it in refrigerator for an hour then cut into triangle or square shape barfi. Garnish with some chopped almonds and pistachio.
Note: If you want to give a green look to the Lauki Barfi a drop or two of green colour can be added at step 5 that is before setting in a greased plate.
