Homemade Lauki Ka Bharta Recipe

Ingredients:

  • 500 gms lauki (bottle gourd)

  • 4 onions chopped finely

  • 2 tomatoes chopped finely

  • 1 cup peas (frozen or fresh)

  • 1 green chilli chopped finely

  • 1/2 tbsp chopped garlic

  • 1/2 tbsp chopped ginger

  • 1 tsp turmeric powder

  • 1 tsp chilli powder

  • 1 tsp coriander powder

  • 1/2 tsp jeera (cumin ) powder

  • 1/2 tsp garam masala

  • salt as per taste

  • chopped coriander leaves for garnishing

Method:

  1. Peel, wash , remove the soft center part and cut the lauki into small cubes.

  2. Take a pressure cooker add the lauki, one and half cup of water, 1/2 tsp salt and cook upto 3 whistles.

  3. Open the cooker remove all the water from the lauki and mash it with a masher. The lauki water can be used to make chapati dough, sabzi gravy or soups.

  4. Heat 3-4 tbsp oil in a pan and saute the garlic ginger, then add the chopped onions and green chilli and cook till it is translucent.

  5. Add the tomatoes, cover and cook till it is soft and mushy.

  6. Add all the dry spices and salt and cook for a minute or two. Then add the mashed lauki and cover and cook for 5 more minutes over low flame.

  7. Remove in a serving bowl and garnish with coriander leaves.

    Serve with chapati or parathas.
