Homemade Lauki ( Bottle Gourd) Ki Sabzi Recipe

Ingredients:

  • 500 gms lauki ( bottle gourd)

  • 1 green chilli chopped finely

  • 1 tsp ginger chopped finely

  • a pinch of asafoetida

  • 1 tsp jeera (cumin ) seeds

  • 1 tsp turmeric powder

  • 1/2 tsp red chilli powder

  • 1/2 tsp coriander powder

  • 1/2 tsp garam masala

  • 1/2 tsp jeera (cumin ) powder

  • salt as per taste

  • some coriander leaves for garnishing

  • 1 tsp lemon juice

Method:

  1. Peel , wash and cut the lauki into cubes.

  2. In a pressure cooker heat 2-3 tsp ghee add asafoetida and jeera when it splutters add the ginger and green chilli then saute.

  3. Add the chopped lauki and cook for 2-3 minutes.

  4. Add all the remaining spices leaving out the garam masala and mix well. Add 2 cups water.

  5. Close the pressure cooker lid and cook on medium flame for up to 4 whistles.

  6. Once the pressure is released open the pressure cooker mix well and add garam masala and water only if required.

  7. Remove in a serving bowl and garnish with coriander leaves and lemon juice.

    Serve this healthy sabzi with chapati or paratha.
