Homemade Khichu Recipe

Ingredients:
1 cup rice flour
1.5 cups water
1 tsp jeera/ cumin seeds
1 tbsp oil
2 tsp white til/ sesame seeds
1/4 tsp soda bi carb
2 green chillies chopped finely
1 tsp chopped ginger
2 tsp chopped garlic
salt as per taste
some chopped coriander leaves
Method:
In a vessel boil 1.5 cups water. Add all the above ingredients keeping 1 tsp til and some coriander leaves for garnishing.
Allow the water to boil for 2 minutes then add the rice flour and mix. Switch off the gas and cover and allow it to rest for 10 minutes.
After the rest time remove the rice mixture on a plate and when it is slightly warm knead it to form a soft smooth dough.
Make equal size balls and roll them into medium thickness logs.
Ina vessel or steamer heat some water. Grease a plate and place the khichu logs on it. Put the plate in the vessel/steamer . Cover and steam on medium flame for 15 minutes.
Remove and allow them to cool . Cut the khichu logs into medium size round shape.
Heat 2 tbsp oil in a pan add the til and the chopped khichu. Fry them for 2-3 minutes.
Remove in a serving dish and garnish with some chopped coriander leaves.
