Homemade Kesar Pistachio Phirni Recipe
Ingredients:
1+ 1/2 liter full fat milk
3/4 cup basmati rice
3/4 cup sugar
1 tsp cardamom powder
7-8 strands saffron
2-3 tbsp chopped pistachio for garnishing
Method:
Clean, wash and soak the rice for half an hour.
Boil the milk and keep aside.
Drain all the water from the rice and in a grinder grind it coarsely.
Soak the saffron in warm water.
Mix the rice in the milk and cook it on low flame.
When the rice is almost cooked add the sugar, cardamom powder and saffron.
Cook again till the rice is fully done.
Decorate with chopped pistachios.
Remove in a serving bowl and refrigerate it.
Serve this yummy phirni chilled.
