Homemade Ivy Gourd ( Tendli) Sabzi Recipe
Ingredients:
500 gms Tendli( Ivy Gourd) chopped into small cubes
2 big onions chopped finely
1 green chilli chopped finely
1/2 tbsp ginger chopped finely
2-3 pinch asafoetida
1/2 tsp jeera (cumin seeds)
1/2 tsp mustard seeds
1/2 tsp turmeric powder
1-2 tsp red chilli powder
1 tsp coriander powder
1 tsp sugar
1/2 tsp garam masala
1/2 tbsp amchur (mango powder )
salt as per taste
coriander leaves for garnishing
Method:
Heat oil in a pan add asafoetida, mustard seeds and jeera when it splutters add turmeric powder, green chilli and ginger and saute for a minute.
Add the chopped onions and cook till it is soft.
Add all the dry spices leaving out the garam masala, sugar and amchur . Saute the masala for a minute on low flame.
Add the chopped Ivy Gourd to the masala.
Cover and cook on low flame stirring at short intervals.
When soft add sugar, garam masala and amchur powder .
Cook till completely dry .
Remove in a serving bowl and garnish with coriander leaves .
Serve with chapatis or parathas.
