Homemade Healthy Vegetable Salad Recipe

Ingredients:

  • 1 cup sweet corn ( fresh/can)

  • 1 cup edamame

  • 1 big tomato deseed

  • 1 big cucumber

  • 1small onion

  • 1 small red or any other colour capsicum

  • 1/2 cup purple cabbage (optional)

  • 1 tbsp each of chopped fresh basil, mint & coriander leaves

  • salt as per taste

  • 2 -3 tbsp balsamic vinaigrette dressing

Method:

  1. Wash the onion, tomato, cucumber, cabbage and capsicum. Chop all of them into small cubes.

  2. Wash the edamame and then steam them till soft. Drain and keep aside.

  3. Open the sweet corn tin. Drain and then wash it.

  4. In a bowl mix all the chopped vegetables, sweet corn and edamame .Then mix the balsamic vinaigrette dressing and salt. Give it a good toss.

  5. Remove in a serving dish and sprinkle the chopped leaves all over it.

Enjoy this tasty as well as super healthy salad.

Note: Veggies of your choice can be added in the salad.

To prepare balsamic vinaigrette dressing at home: In a glass bottle mix 1 tbsp olive oil, 1 tbsp balsamic vinegar, 1/2 tsp maple syrup or honey , 1/4 tsp Dijon mustard, salt and pepper to taste. Shake well and pour on salad.
