Homemade Gajar Ka Halwa with Jaggery Recipe

Ingredients:

  • 1 kg red gajar ( carrots)

  • 1 liter full fat milk

  • 250 gms khoya ( mawa)

  • 1 and half cups organic jaggery or normal jaggery

  • 2 tsp cardamom powder

  • 3 tbsp ghee

  • 2 tbsp broken and 1 tbsp whole cashewnuts

  • 3 tbsp chopped almonds

Method:

  1. Peel, wash, dry and then grate the gajar.

  2. Grate the khoya and dry roast it in a pan for 3-4 minutes. Keep aside for future use.

  3. In a heavy vessel or kadai heat the ghee and fry the chasewnuts.Remove and keep aside.

  4. In the remaining ghee add the grated gajar and cook on high to medium flame fro 5-10 minutes till all the moisture in the gajar dries.

  5. Slowly add the milk and cook on high to low flame stirring at intervals till the milk dries. This process may take about 50-60 minutes.

  6. Then add the jaggery and cook again on low flame till the halwa becomes thick and the jaggery water dries completely.

  7. Add the khoya, almonds, fried broken chasewnuts and cook for another 5 - 10 minutes.

  8. Remove in a serving dish and garnish with some whole fried chasewnuts.
