Home made Gajar (Carrot) Halwa Recipe

Ingredients:

  • 1 kg Indian carrots

  • 2 kgs full fat milk

  • 2 cups sugar

  • 1/2 cup ghee

  • 1 tsp cardamom powder

  • 18-20 almonds chopped lengthwise

  • 18-20 raisins soaked in water

  • few strands of saffron soaked in water

Method:

  1. Peel, wash, dry and grate the carrots and keep aside.

  2. Soak the saffron and raisins in water separately.

  3. Take a heavy based vessel saute the carrots for 5-10 minutes on low flame till all the water dries from it.

  4. Slowly add all the milk in the carrot and cook on medium to low flame, stirring continuously at short intervals.

  5. After an hour or so when the milk thickens add the saffron water, squeezed raisins, cardamom powder and ghee .

  6. Cook again for about 30-40 minutes approximately till all the milk dries.

  7. In a pan add the sugar and enough water just to cover the sugar and heat it till the sugar melts. Add the sugar syrup to the gajar halwa and mix well.

  8. Cook again stirring continuously till you get the halwa consistency.

  9. Remove in a serving bowl and garnish with almonds and serve hot or cold.

Note: Gajar Halwa can be stored in the refrigerator for almost 1-2 weeks
