Homemade Edamame Salad Recipe

Ingredients:

  • 2 cups frozen edamame

  • 1 big carrot

  • 4-5 broccoli florets

  • 9-10 baby tomatoes

  • 1/2 lemon juice

  • 1 tsp pepper

  • salt as per taste

  • 1 tbsp black til (sesame seeds)

  • 1 tbsp each of sunflower, melon and pumpkin seeds (optional)

  • few walnuts for garnishing

Method :

  1. Peel, wash and chop the carrots into quarter inch round disc.

  2. Clean and chop the broccoli into florets. Wash the broccoli and frozen edamame.

  3. Steam all the above veggies without the tomatoes till slightly soft but crunchy.

  4. Slice the baby tomatoes into halves.

  5. In a bowl add all the above veggies, lemon juice, salt and peeper. Give it a good toss so that all the veggies are well coated.

  6. Remove in a serving bowl and garnish with black til, all the seeds and walnuts.

Enjoy this easy , quick and healthy salad.

Note: veggies of your choice can be added in the salad.
