Homemade Curry Leaves Podi /Powder Recipe

Ingredients:

  • 1 cup fresh curry leaves

  • 1 tbsp urad dal

  • 4 tbsp chana dal

  • 2 tbsp dessicated coconut

  • 4 nos whole kashmiri chillies

  • 1 tsp coriander seeds

  • 1 small lemon size tamarind without seeds

  • salt as per taste

Method:

  1. Clean and wash the curry leaves properly. Spread it on a clean cloth and allow it to dry completely.

  2. Wipe both the dals with a clean cloth or kitchen tisssue to remove the powder from them.

  3. In a pan dry roast all the curry leaves on low to medium flame till they are crispy .Keep aside for future use.

  4. In the same pan add 2 tsp oil and fry the chana dal then add the urad dal and fry on low to medium flame stirring constantly till they are light golden in colour. Then add the whole chillies and corainder seeds and fry for a second . Remove in a plate and allow it to cool.

  5. In a grinder jar add the roasted curry leaves , fried dals, whole chillies, coriander seeds ,dessicated coconut, tamarind and salt. Grind into a fine powder.

  6. Remove in a dry glass bottle and keep it at room temperature if using on a daily basis or for longer shelf life keep it in the refrigerator.

Enjoy this yummy and healthy podi with rice or idlis.
