Homemade Cucumber ( Vellerikka) Sabzi Recipe

Ingredients:

  • 500 gms cucumber ( Vellerikka) chopped into small cubes

  • 1 onion chopped finely

  • 1 green chilli chopped finely

  • 1 tsp ginger chopped finely

  • few curry leaves chopped finely

  • 2-3 pinch asafetida

  • 1/2 tsp mustard seeds

  • 1/2 tsp chilli powder

  • 1/2 tsp garam masala

  • salt as per taste

  • some coriander leaves for garnishing

Method:

  1. Peel the cucumber ( Vellerikka) and remove all the seeds, wash and chop into small cubes.

  2. In a pan boil the cucumber with some water and salt. Cook till soft. Drain all the extra water and keep the cucumber aside for future use.

  3. Heat oil in a pan add asafetida and mustard seeds when it splutters add the curry leaves, ginger, green chilli, and turmeric powder. Add the chopped onions and cook till it is soft.

  4. Then add the boiled cucumber and chilli powder.

  5. Cook on low flame till completely dry then add the garam masala. Saute for one minute.

  6. Remove in a serving bowl and garnish with coriander leaves .

    Serve this sabzi with chapati or paratha.
