Homemade Coconut Milk Rice Recipe

Ingredients:

  • 2 cups basmati rice

  • 2 onions cut into long pieces

  • 1 whole red chilli

  • 2 tbsp chana dal

  • 2 cups urad dal

  • 20-25 cashewnuts

  • 1 tbsp mustard seeds

  • 2 tbsp chopped curry leaves

  • some chopped coriander leaves for garnishing

  • 2 cups coconut milk tin

  • salt as per taste

  • some grated coconut for garnishing

  • 5 tbsp pure ghee

Method:

  1. Clean, wash and soak the rice for half an hour in 2 cups water.After half an hour remove the excess water.Keep for future use.

  2. Wash and soak both the dals for 10-15 minutes. Drain the water and keep aside.

  3. In a pressure cooker heat 5 tbsp ghee then add the mustard seeds when it splutters add both the dals and saute for a few seconds then add the chopped onions, whole red chilli, curry leaves and cashewnuts . Saute for another 5 minutes. Add the coconut milk, rice and salt. Mix well and close the cooker.

  4. Cook upto 3 whistles.When the pressure goes off, open the cooker and lightly mix the rice.

  5. Remove in a serving dish and garnish with some chopped coriander leaves and grated coconut.
