Homemade Cheesy Crispy Baked Potato Bites Recipe

Ingredients:
18 nos small or baby potatoes
1 tbsp salted butter
1 tbsp oil
1 tbsp chopped garlic
1 tbsp chilli flakes
1/2 tbsp oregano
3 tbsp chopped parsley or coriander leaves
1/4 cup grated mozzarella cheese
salt as per taste
Method:
Wash the potatoes properly .
Take a pressure cooker boil some water with 2 tsp salt then add the washed potatoes and cook up to 2 whistles.
Once the pressure is released remove the potatoes from the cooker and allow them to cool.
With a potato masher lightly mash all the potatoes with the skin one by one.
To make garlic butter heat a small pan with 1 tbsp oil then add the chopped garlic and saute it. To it add the butter and when it melts add the chopped parsley, saute for a second and then remove from flame. Add the chilli flakes and oregano and mix well. Keep aside.
In a baking tray arrange the mashed potatoes then sprinkle some salt all over them. Cover /spread the mashed potatoes with some garlic butter .
Pre heat the oven at 200 C for 10 minutes. Place the tray in the oven and bake the potatoes for 20 minutes. After 20 minutes if the potatoes are still not crispy bake it for another 10 minutes at 250 C.
Remove the tray from the oven and sprinkle some grated mozzarella cheese on all the baked potatoes and again bake them for 5 minutes or till the cheese melts.
Removing in a serving dish.
