Homemade Biryani Recipe

Ingredients:

  • 2 cups basmati rice

  • 4 onions cut long

  • 2 tomatoes cut finely

  • 1 tin /can sweet corn

  • 1 red capsicum cut into cubes

  • 2 yellow capsicum cut into cubes

  • 5-6 fresh whole mushrooms cut into cubes

  • 2 cups paneer cubes (frozen or fresh)

  • 2 small potatoes cut into cubes and swallow or deep fried

  • 2 tbsp chopped garlic 

  • 1 tbsp chopped ginger

  • 3-4 green chilies chopped finely

  • 1 tbsp red chilli powder

  • 1 tbsp kashmiri chilli powder

  • 2 tbsp coriander powder

  • 1 tsp garam masala

  • ½ tbsp jeera powder (cumin powder)

  • ½ tsp pepper powder

  • ½ tsp cinnamon powder

  • ½ tsp cardamonmpowder

  • ½ cup thick curds (yogurt )

  • salt as per taste

  • few cashewnuts and raisins

 

Method:

  1. Clean, wash and soak the rice for half an hour . In a vessel boil some water and then add 1 tbsp salt and cook till it is semi soft or 80% cooked. Drain the water and keep aside to cool.

  2. In a bowl add half the quantity of the rice and rub a little orange colour on it then mix it with the remaining white rice.

  3. For the marination add all the dry spices, salt , ginger, garlic and green chilies to the curds. Then add all the vegetables leaving out the paneer. Keep it for 10-15 minutes. 

  4. in a kadai deep fry the cashewnuts and raisins , remove on a kitchen tissue .Then deep fry the onions in small batches till it is brown and crispy. Keep 2-3 tbsp for garnishing and crush all the remaining onions in the marination. In a heavy based vessel add the marination and cook for 5- 10 minutes along with the paneer till the mixture is dry. Remove in a bowl and keep for future use.

  5.  In the same vessel take 4-5 tbsp oil then put half the quantity of rice and spread it evenly. Top it with the cooked vegetables and then layer it with the remaining rice .

  6. Garnish with fried onions and dry fruits and 2-3 tbsp ghee. 

  7. Put the vessel on tawa and cook on slow flame for 15-20 minutes or till the ghee melts.

    Serve this yummy Briyani with yogurt and pickle.
