Homemade Baingan in Green Masala Recipe
Ingredients:
500 gms baingan ( brinjal /eggplant)
1 big onion chopped finely
1 tsp turmeric powder
1 tsp garam masala
1/ 2 tbsp jaggery
1/2 tbsp lemon juice
some chopped coriander leaves for garnishing
salt as per taste
Ingredients for Green Masala :
1/4 cup peanuts
1 tbsp white til ( sesame)
1/2 tbsp jeera ( cumin seeds )
1 tbsp whole coriander seeds
1 inch ginger
2 pods garlic
3-4 green chillies
1/2 cup coriander leaves
Method:
Wash and chop the baingan into medium thickness long pieces and put them in salt water for 10-15 minutes.
Dry roast for few seconds first the peanut then add the til, jeera and coriander seeds . Allow it to cool.
In a grinder jar add the roasted ingredients and grind in pulse mode then add the ginger, garlic, chilles and coriander leaves and again grind in pulse mode only till u get a coarse mixture. Remove and keep aside.
In a pan heat 2 tbsp oil and sauté the onions till soft and translucent. Then add the turmeric and baingan. Cover and cook on low flame stirring at intervals till it is 80% cooked.
Add the green masala , salt, jaggery and 1 cup water. Cover and cook on low flame till the baingan are fully cooked. Add the garam masala and lemon juice.
Remove in a serving dish and garnish with coriander leaves.
Enjoy this yummy sabzi with chapati , rice or parathas.
