Homemade Baingan Ka Bharta Recipe

Ingredients:

  • 3 medium size bharta brinjals/ eggplant

  • 3 onions chopped finely

  • 4 tomatoes chopped finely without skin

  • 1 cup boiled peas (frozen)

  • 1 green chili chopped finely

  • 1/2 tbsp chopped ginger

  • 1 tsp jeera (cumin) seeds

  • 1 tsp red chili powder

  • 1 tsp coriander powder

  • 1/2 tsp jeera (cumin ) powder

  • 1/2 tsp garam masala

  • some coriander leaves for garnishing

Method:

  1. Wash and dry pat the brinjals. Roast all the brinjals on medium flame on all sides so that it is cooked evenly. Allow it to cool then peel and mash. Keep aside.

  2. Heat 2-3 tbsp oil in a heavy based vessel add the cumin seeds , when it splutters add the green chili, ginger, chopped onions and cook till the onions are pink in colour.

  3. Add the chopped tomatoes and cook till it is soft and mushy. Add all the above dry spices and cook for another 2-3 minutes.

  4. Add the mashed brinjals to the onion and tomato gravy and cook till it mixes well with all the spices for about 5-10 minutes.

  5. Remove in a serving bowl and garnish with coriander leaves.

    Serve this delicious baingan bharta with paratha or chapati.
