Homemade Avial Recipe

Ingredients:

  • 1 carrot

  • 2 big potatoes

  • 200 gms french beans

  • 300 gms yam (suran)

  • 2-3 raw bananas

  • 2-3 drum sticks

  • 1 big piece ginger

  • 7-8 green chillies

  • 3 cups grated coconut

  • 1 cup curds (yogurt)

  • 1 tbsp mustard seeds

  • 4-5 strings curry leaves

  • salt as per taste

  • 1 tbsp coconut oil

Method:

  1. Peel, wash, clean and cut all the above vegetables into thick long pieces.

  2. In a grinder add curds, coconut, chillies, ginger and grind coarsely.Keep aside.

  3. Heat some water in a pan with a little salt and cook the yam till soft. Drain all the water and keep aside.

  4. Heat 2 cups water and put the remaining vegetables in it with salt and cook till soft.

  5. Once the vegetables are soft add the yam, coconut paste and mix well . Cook till the gravy is thick.

  6. In a small pan heat coconut oil add the mustard seeds when it splutters add curry leaves . Pour the tadka on the cooked Avial.

  7. Remove in a serving bowl.

    Enjoy this yummy Avial with rice.
