Homemade Aloo Bathua Stuffed Paratha Recipe

Ingredients for Dough :
2 cups multigrain or wheat atta/flour
1 tsp salt
oil for cooking
Ingredients for Stuffing:
2 boiled potatoes mashed
1 big bunch bathua blanched
2-3 green chillies chopped finely
1 tsp chopped ginger
1 tsp jeera/cumin seeds
1/4 tsp hing/asefodita
1 tsp chilli powder
salt as per taste
Method:
In a bowl add the atta and salt and knead into a very soft dough by adding water as required. Cover and keep it aside for future use.
Remove all the bathua leaves from the stalk. Wash it properly and add it in a vessel with half cup water. Cook on low flame for 5 minutes. Drain all the remaining water and squeeze out all the extra water . Allow it to cool. Then chop it finely.
Boil and then mash the boiled potatoes.
In a pan heat 1 tbsp oil then add the jeera when it splutters add the hing ,ginger, green chillies, mashed potatoes, bathua , chilli powder and salt .Mix and cook on low flame for about 2-3 minutes or till the mixture is dry. Remove in a plate and let it cool. The stuffing is ready.
Knead the dough once again to make it smooth. Make equal size balls of the dough. Cover and keep.
Make a little smaller balls of the stufffing mixture .Keep aside.
Take a dough ball, dust some flour and make a small chapati. Place a ball of the stuffing on it and bring all the sides of the chapati together to form a round ball. Again dust some flour on the dough stuffed with the filling and then roll into a medium thickness round paratha.
Heat a tawa then place the rolled paratha on it and cook on medium flame applying oil on both sides till brown spots are seen all over.
Remove in a plate and repeat the process till all the dough is used up.
Enjoy this yummy parathas with some yogurt and red chilli pickle.
