Homemade Pumpkin ( Kaddu) Sabzi Recipe

Ingredients:

  • 500 gms yellow pumpkin chopped into cubes ( without skin)

  • 1 green chilli chopped finely

  • 1/2 tbsp ginger chopped finely

  • 2-3 pinch asafoetida

  • 1 tsp jeera (cumin seeds)

  • 1 tsp mustard seed

  • 1 tsp methi (fenugreek seeds)

  • 1/2 tsp turmeric powder

  • 1 tsp red chilli powder

  • 1/2 tbsp coriander powder

  • 1 tsp jeera powder (cumin powder)

  • 1 tsp garam masala

  • 1/2 juice of lemon

  • 1 tsp sugar or jaggery (optional)

  • salt as per taste

  • coriander leaves for garnishing

Method:

  1. .Heat 1/2 tbsp oil in a pan add asafoetida, jeera and mustard, when it splutters add the methi, turmeric powder, green chilli and ginger and saute for a second.

  2. Add the chopped pumpkin, cover and cook on low flame stirring at intervals till semi soft.

  3. Add all the dry spices leaving out the garam masala and lemon.

  4. Again cover and cook on low flame stirring at short intervals till it is cooked.

  5. Add garam masala and lemon juice. Cook till completely dry .

  6. Remove in a serving bowl and garnish with coriander leaves .

    Serve this khatti meethi sabzi with chapatis, paratha or poori.
