Homemade Pakoras Recipe
Ingredients:
2-3 medium size potatoes
2-3 onions
5-6 green chilles
1 tsp red chilli powder
sat as per taste
For Batter:
3 cups besan (gram flour)
1 cup rice flour
1/4 tsp asafoetida
1/2 tsp turmeric powder
1 tsp red chilli
1 tsp ajwain (carom seeds)
salt as per taste
2-3 tbsp kasuri methi ( dried fenugreek leaves)
oil for frying
Method:
Cut the potatoes and onions into 1/4 inch round shape and make a slit in the green chillies.
Sprinkle red chilli powder and salt on the chopped potatoes, onions and green chilli. Keep it to rest for 10-15 minutes.
Take a bowl mix all the above ingredients of the batter and make a semi thick batter by adding water as required. Keep it to rest for 15-20 minutes.
Mix the batter in one direction till it becomes soft and fluffy.If it is too thick add some more water to the batter.
Heat oil for frying. Dip the potatoes, onions and green chilli one by one in the batter. Coat them properly with the batter and fry them in oil over medium flame till golden brown.
Serve hot with green chutney, sweet and sour chutney or ketchup.
note: brinjal, cauliflower, paneer and palak leaves can also be included with the potatoes, onions and chillies.
