Homemade Lemon Rice Recipe

Ingredients:

  • 2 cups Basmati Rice

  • 1 cup roasted peanuts without skin

  • 1/4 cup mix of chana and urad dal

  • 1-2 whole red chilli

  • 1 tsp turmeric powder

  • 1/4 tsp asafoetida

  • 1 tsp mustard seeds

  • 2 tbsp lemon juice

  • 1 tbsp curry leaves chopped finely

  • 1/2 tbsp ginger chopped

  • 3-4 green chillies chopped

  • some coriander leaves chopped

Method:

  1. Clean, wash and soak the rice for about 30 minutes.

  2. Cook till soft,drain the extra water and keep aside.

  3. Wash and soak the dals for 5-10 minutes.Remove the extra water and keep aside.

  4. Take a heavy based vessel , heat 5-6 tbsp oil when hot add the asafoetida and mustard seeds when it starts to splutter add the soaked dals, saute for a minute or two.

  5. Then add the turmeric powder, curry leaves, chillies and ginger.

  6. Add the roasted peanuts and saute for 2-3 minutes on low flame.

  7. Add the cooked rice and salt stir and cook for 4-5 minutes on low flame.

  8. Switch off the gas then add the lemon juice.

  9. Remove in a serving bowl and garnish with coriander leaves.

    Serve this tasty lemon rice with curds or Rasam.
