Homemade Lasooni Palak Paneer Recipe

Ingredients:
3 bunch palak ( spinach)
1/2 inch ginger chopped roughly
2 green chillies chopped roughly
2 big chopped onions
2 big chopped tomatoes
250 gms paneer cubes ( fresh or frozen)
1/2 tbsp chopped garlic
1 cinnamon stick
1 black cardamon
1 tsp chilli powder
1 tbsp coriander powder
1 tsp jeera powder ( cumin powder)
salt as per taste
3-4 tbsp ghee or oil
For Tadka:
1/2 tbsp chopped garlic
1 tsp kashmiri chilli powder
2 whole red chillies
Method:
Pluck the palak leaves from the stem and wash them.
In a heavy bottom vessel add all the palak with a pinch of salt and 1 tbsp water then blanch/ cook for 1-2 minutes on low flame. Drain and allow it to cool.
In a grinder jar add the chopped ginger, green chillies and blanched palak and grind to form a fine paste. Keep aside for future use.
Shallow fry all the paneer cubes and keep aside.
In a kadai heat 3 tbsp ghee then add the cinnamon, cardamon and chopped garlic saute it for a second then add the onions and cook on low flame till golden brown in colour. Add the chopped tomatoes and cook on medium to low flame till mushy and drops of ghee is seen on the sides of the vesssel. Add all dry spices and salt and stir well. Then add the palak puree and cook on low flame stirring at intervals for 5 minutes. Lastly add the fried paneer cubes and simmer for 1-2 minutes. If the gravy is too thick a little water can be added.
Remove from flame .Cover and keep the sabzi.
Just before serving remove in a serving bowl. For the tadka heat 1 tbsp ghee when hot add the garlic and saute till it is slightly brown in colour then add the whole chilli and chilli powder and pour it on the palak paneer.
