Homemade Chandrakala Recipe

Ingredients for Covering :
200 gms maida
50 gms ghee
pinch of salt
oil for frying
Ingredients for Stuffing:
200 gms grated mawa ( khoya )
60 gms powdered sugar
1 tsp cardamon powder
1 tbsp chopped almonds
1 tbsp chopped pistachio
1 tbsp chopped cashewnuts
Ingredients for Sugar Syrup :
1 cup sugar
1/2 cup water
5-6 strand of saffron
Method:
In a bowl mix all the ingredients of the covering that is maida, salt and ghee. Rub the flour with the fingers till it looks like bread crumbs. Add water little by little to make a stiff dough. Allow it to rest for 20 minutes.
In a pan roast the mawa for 5 minutes on low flame stirring continuously . Remove from flame and allow it to cool. Then only add the powdered sugar and chopped nuts and mix well.
Mix the sugar, water and saffron together and cook on low flame stirring continuously till the sugar melts and the syrup becomes sticky. Let it cool down and keep aside for future use.
Knead the dough again and make equal size small balls. Take one ball and roll into small medium thickness disc. Place 1 tbsp of the stuffing in the center. Brush some water on the edges of the disc. Roll another ball into the same size disc and brush some water on the edges of it also. Place it on the top of the disc with the stuffing, the wet side inside. Place it on a flat surface and press the edges lightly with the fingers to seal it completely. Pinch and fold as shown in the below image. Alternatively the edges can also be lightly pressed with a fork. This is mainly done so that it does not open while frying.
Repeat the process till all the Chandrakala are ready. Keep them covered by a thick cloth so that they do no dry.
Heat some oil in a kadai then slowly place one by one the Chandrakala in medium hot oil. Allow them to float on the oil then slowly turn and let it cook. Again cook till golden brown in colour on both sides.
Remove from oil and directly put them in the cooled sugar syrup. Let it remain in the syrup just for a minute ensuring both the sides are well immersed in the syrup. Then remove and keep aside.
Once all the Chandrakala are dipped in the syrup sprinkle some nuts all over them and decorate with some silver foil.
