Homemade Aloo ( Potato) Kulcha Recipe

Ingredients for Kulcha:

  • 4 cups white flour ( maida)

  • 1 tbsp instant yeast

  • 2 tsp sugar

  • 1/2 tbsp salt

  • 2-3 tbsp oil

  • 1 cup milk

  • 1/2 cup water approximate

Ingredients for Aloo Filling:

  • 6 potatoes boiled

  • 2 onions chopped finely

  • 1/2 tbsp ginger chopped finely

  • 2-3 green chillies chopped finely

  • some coriander leaves chopped finely

  • 1/2 tsp turmeric powder

  • 1/2 tbsp red chilli powder

  • 1/2 tbsp coriander powder

  • 1/2 tbsp jeera (cumin )powder

  • 1/2 tbsp garam masala

  • salt to taste

For Kulcha Toppings:

  • 1-2 tbsp Kalonji (onion seeds )

  • 1-2 tbsp kasuri methi (dried fenugreek leaves )

Method:

  1. Soak the yeast and sugar in lukewarm milk for 10-15 minutes till it rises or froths.

  2. In the maida add the salt and mix well . Make a well in the center and then add the frothed yeast.

  3. Add water little by little to the maida and mix well to form a semi soft dough.

  4. Add oil in the dough at intervals to make a smooth dough.

  5. Cover and keep aside to rest for 1 hour in a warm place.

  6. Peel and mash the boiled potatoes into small pieces.

  7. Heat 3-4 tbsp oil then add the ginger and green chillies with the onions and saute till soft.

  8. Add the mashed potatoes saute for a few minutes then add all the spices and mix well. Garnish with coriander leaves and allow it to cool.

  9. After 1 hour pat the dough to remove all the extra air and bubbles from it.

  10. Make balls of equal size from the dough.

  11. With the potato filling make balls a little smaller than the size of the dough balls..

  12. Take one maida dough ball roll it to a size just enough to put the potato ball.

  13. Place the potato filling and bring all the sides of the dough together and seal it .

  14. Sprinkle some maida flour on a rolling board or platform surface and with a rolling pin roll into a round medium thickness kulcha. Sprinkle some kasuri methi and kalonji on it.

  15. Heat a tawa, grease it with a little oil put a kulcha on it cover and cook on one side then flip cover and cook on the other side. When both the sides have brown spots on it remove on a plate and apply some ghee or butter.

    Serve this delicious Kucha with some yogurt and pickle.

    Alternatively the kulchas can also be baked in the oven at 180 C for about 30-40 minutes (refer last image)
